Little B.T.C. To Rock The Buds
Interesting day. Got to work, 40 minutes later the phone rings and it's B-Man's day care. The electricity is down and the kids gotta scram. SSSSSSSooo I leave work and spend the day hanging with B-Man watching Jimmy Neutron, napping and looking for spiders in the back yard (don't ask).

during B-Man's nap I open the mail and get all jacked about the DNF mistake from 7 Springs. Sorry about that by the way. Who knew someone could get pissed about whether they finished last or DNFed!

Once Wifey got home and B-Man was up from his nap it was off to Tom's to get the Dos Niner rehabed. New cables, housing, X.0 twist shifters lubed up etc. Thanks Tom, my racing skills need to come up to your mechanical abilities.

When I got home from T's I cooked up some B.T.C. (Beyond Tuna Casserole):
3/4 box of chunky pasta
1 bag of low fat cheddar cheese
small onion diced
2 hand full of baby leaf spinach chopped
2 large cans of Albacore tuna (in water)
Olive oil
Kosher salt
Black pepper
Cook pasta till done/drain.
Saute diced onion in some olive oil.
Open tuna, drain water, set aside.
Chop spinach, set aside
Add drained pasta to onion & olive oil. Add more olive oil if necessary to coat.
Add 1/2 bag of cheese spinach, tuna, & mix through.
Salt and pepper to taste.
Top with remaining cheese
Bake at 350* for 10-15 in covered casserole dish. I have a bad ass metal/glass wok that I shove in the oven.
Eat this bad boy up and think about how it tastes nothing like the crappy tuna casserole your parents used to shove in your pie hole when you were young.

uh oh, we must be getting to the off season again because you're hitting us with recipes again. marcy still makes your pizza rolls on a semi regular basis.

I make a killer traditional T.C. but this sounds like a good change! Maybe tonight hmmm

Hey Jason - I did this the other night with chicken instead. Boiled some chicken breasts until you could cut 'em with a fork, then chopped them and mixed in instead of the tuna. It was very yummy :-)
